But a rubber in extra virgin olive oil, called oleocanthal was found to inhibit COX enzymes such as ibuprofen, in what researchers as a "dose dependent." This research was originally in the September 2005 issue of the journal Nature by Paul Breslin and his staff from Monel Chemical Senses Center. He oleocanthal describes as a natural anti-inflammatory substance, which may be as strong as ibuprofen.
